Come explore the flavors of one of Key West’s
finest and most exciting chefs in town!
Chef Guillaume Pailloux came to Key West as a teenager 28 years ago from Quebec, Canada. Tired of shoveling snow on the family farm, Pailloux headed south for greener pastures.
After an initial stint at a lemonade stand, Pailloux’s culinary education came courtesy of Danny Hatch, who gave him his first kitchen job at Blue Heaven and Alice Weingarten of Alice's encouraged the young chef to explore fushion cooking.
Chef also credits his craft to years spent watching his French grandmothers prepare family meals. He now owns two successful oceanside restaurants here in Key West, FL. Fly Away Café and Hideaway Grill.
